Volare Bread

Ryan is a 5th generation baker. With no formal baking qualifications, Ryan is one of the founders of Volare Bread. Driven by wanting to learn how everything works at a base level, Ryan has helped establish Volare as the Waikato and Bay of Plenty’s premier Artisan Bakery. 

Volare distributes to cafe’s, restaurants and all good food stores. Ryan says he is not afraid to fail if it means he can learn something from it.

Make sure to book into one of his masterclasses where he and Sam, Volare's head pastry chef will teach you how to make two classic pastry items. 

  • Mille Feuille (Custard Slice) - Mousseline Cream layered between slices of caramelised all butter puff pastry
  • Éclair - The art of the classic éclair, filled with a basic Crème Patisserie 


His advice to new cooks

"Dont be afraid to fail, that's when you learn the most".
